It's just a bad idea to update the Nginx core in the OpenResty bundle
yourself because your own Nginx version may not work with other
components at all. And Nginx tends to break its API compatibility from
time to time. Every OpenResty release goes through extensive testing
on my Amazon EC2 test cluster:

You're on your own risk if you don't run the same huge test suite on your own.
If you still insist in updating the Nginx core in the OpenResty bundle
yourself, you can just overwrite the bundle/nginx-* directory in your
ngx_openresty's source tree (from the release tarball, not github
repos).
