Ok, I've solved the issue at hand the best I can, so for anyone interested in adding swagger to the OperResty/PostgREST starter kit https://github.com/subzerocloud/postgrest-starter-kit, the only modification that were needed to be done is the following.
Put the swagger static bundle in the docs which you'll create under the openresty/html folder.
Create file mime.types under the openresty/nginx folder with the following (default for nginx contnent):
